This Ham and Potato Soup is wholesome goodness in a bowl. I adore this comfort food as it combines two of my favorite things – soft, fluffy potatoes and salty ham. I love to make a big batch of this soup when I have leftover cooked ham. It’s a great way to use up leftovers and tastes delicious too.
Sauté onion, carrots and celery in melted butter. Add potatoes and ham followed by garlic and flour to thicken the soup. Pour in stock and bouillon and bring the soup to a boil. Pour in milk and stir until the soup thickens. Season and serve.
To make the Ham and Potato Soup, you will need the following ingredients:
Place ⅓ cup of unsalted butter in a large pot over medium heat to melt.
Add 1 finely chopped onion, 1 cup of diced carrots, ½ a cup of diced celery to the melted butter. Sauté until the veggies soften.
Stir in 1 ½ cups of diced ham and 3 cups of diced potatoes. Continue to cook for 2 more minutes.
Stir in 4 cloves of minced garlic and sauté until fragrant. Sprinkle in ⅓ cup of flour and cook for 2 minutes.
Pour in 2 cups of stock and bouillon and stir to mix all ingredients together. Turn up the heat and bring the contents of the pot to a boil for 10-12 minutes until the potatoes are tender.
Turn the heat to medium-low. Pour in 3 cups of milk and stir for about 5 minutes until the soup thickens.
Add salt and pepper to taste.
Serve this soup warm in large bowls.
