This Healthy Apple Pie Granola is loaded with all the good things: old-fashioned rolled oats, nuts, apples, spices, and maple syrup for sweetness. I like using walnuts because of their flavor and health benefits. Of course, you could use your favorite nuts, too. Nutty and not-too-sweet, this fall granola is great with milk or sprinkled over yogurt.
This recipe ticks all the boxes of my granola preferences: it is wholesome, filling, and has plenty of texture. Plus, it is quick – only 30 minutes from start to finish – and easy to prepare, making it an excellent weeknight option. To get the clumpy granola, press the granola into the rimmed baking sheet before you put it in the oven. Stir it only once halfway through baking and press down on the finished granola before it cools. Cool on the pan completely before transferring to a storage container. When stored in an airtight container, this granola will keep for up to two weeks.
To make the Healthy Apple Pie Granola, you will need the following ingredients:
Preheat the oven to 325 °F and line a baking sheet with parchment paper.
In a large mixing bowl, combine 2 ½ cups old-fashioned rolled oats (gluten-free if needed), ½ cup chopped walnuts, 1 ½ teaspoons cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon salt, and ⅔ cup cubed apples.
Add in ⅓ cup coconut oil, ¼ cup maple syrup, and 1 teaspoon vanilla extract and stir until all the oats are well coated.
Spread the granola on the prepared baking sheet in an even layer and press down with a spatula.
Bake for about 22 to 27 minutes until golden brown. Stir the granola once halfway through baking and re-press the stirred granola down with your spatula. The granola will still feel wet coming out of the oven but will dry and crisp as it cools.
Let the granola cool completely on the baking sheet before breaking it up into clusters.
Serve with milk or yogurt. Store in an airtight container for up to 2 weeks at room temperature.
