To make this rice, start by cooking onions until golden. Add cauliflower and stir to combine. Season with salt and cook while stirring until the cauliflower softens. Remove the pan from the heat and spoon the cooked cauliflower into a large serving bowl. Garnish with parsley and drizzle with lemon juice. Taste and adjust salt. Serve warm.
To make Healthy Cauliflower Rice, you will need the following ingredients:
Break a head of cauliflower into florets. Working in batches, pulse the cauliflower in a food processor until it resembles couscous.
Heat oil in a skillet over medium-high heat. Once warm, add onions and cook while stirring frequently until golden brown and soft.
Add cauliflower rice to the skillet and stir to combine.
Add 1 teaspoon of salt. Cook while stirring frequently for 3 - 5 minutes, until the cauliflower has softened. Remove the skillet from the heat.

Garnish the couscous with parsley and sprinkle with lemon juice. Taste and adjust salt.
