Ingredients

For mushroom sauce:
1 cup Cashews soaked
1 tbsp Olive oil
1.5 lbs Button mushrooms or cremini, sliced
1 Garlic clove large, minced
1 tsp Sea salt
ÂĽ tsp Black pepper fresh cracked
For casserole:
1.5 lbs Green beans fresh or frozen, cut into bite-sized pieces
1 tbsp Olive oil
1 Onion large, thinly sliced
1 cup Panko crumbs or sub gluten-free bread crumbs, omit for paleo

This Healthy Vegan Green Bean Casserole is another one of my delicious Christmas side dish recipes that the whole family will love this year. You will be surprised at how creamy this delicious mushroom sauce is – you will hardly believe that it is vegan.  

Start by making my creamy mushroom sauce. Assemble the casserole from the green beans and mushroom sauce. Bake until hot, bubbling and the green beans are soft. While the casserole is in the oven, prepare the topping by heating olive oil and cooking onion until soft and brown. Add the panko bread crumbs to the pan and leave to brown. Once the beans are soft, mix them around and pour the topping over the casserole. Serve immediately.

Steps to make Healthy Vegan Green Bean Casserole

Sauté mushrooms

In a large frying pan, heat 1 tablespoon of olive oil over medium-high heat. Add 1½ pounds of sliced mushrooms and cook, stirring occasionally for about 15 minutes until soft and brown.

Make sauce

Add a scoop of the cooked mushrooms to a blender or food processor with 1 cup of soaked cashews, 1 minced garlic clove, sea salt, pepper, and 1½ cups of water. Blend on high until smooth.

Bring to boi

Return the sauce into the pan with the remaining mushrooms. Bring the sauce to a boil before removing from the heat.

Heat oven

Preheat the oven to 375 °F.

Spoon some mushroom sauce into casserole dish

Spoon enough mushroom sauce into the bottom of an 11x9-inch casserole dish to cover it with a thin layer of the mushroom sauce.

Place green beans and remaining sauce in casserole dish

Place half the green beans in the casserole dish and add half of the remaining mushroom sauce. Repeat until you have used all the green beans and the sauce.

Top with water

Pour ½ a cup of water over the top before sealing tightly with aluminum foil.

Bake

Bake the green bean casserole in the preheated oven for 30-40 minutes, or until hot, bubbling and the green beans are soft.

Make topping

In a large frying pan, heat 1 tablespoon of olive oil over medium-high heat. Add a thinly sliced onion and cook for about 8-10 minutes until it is soft and brown. Add the panko bread crumbs to the pan and cook for about 2 minutes until brown.

Serve

Mix the cooked green beans with the sauce. Pour the topping over the casserole and serve immediately.
