Healthy Vegan Green Bean Casserole

This Healthy Vegan Green Bean Casserole is another one of my delicious Christmas side dish recipes that the whole family will love this year. You will be surprised at how creamy this delicious mushroom sauce is – you will hardly believe that it is vegan.  

Start by making my creamy mushroom sauce. Assemble the casserole from the green beans and mushroom sauce. Bake until hot, bubbling and the green beans are soft. While the casserole is in the oven, prepare the topping by heating olive oil and cooking onion until soft and brown. Add the panko bread crumbs to the pan and leave to brown. Once the beans are soft, mix them around and pour the topping over the casserole. Serve immediately.

    Sauté mushrooms

    In a large frying pan, heat 1 tablespoon of olive oil over medium-high heat. Add 1½ pounds of sliced mushrooms and cook, stirring occasionally for about 15 minutes until soft and brown.

    Add a scoop of the cooked mushrooms to a blender or food processor with 1 cup of soaked cashews, 1 minced garlic clove, sea salt, pepper, and 1½ cups of water. Blend on high until smooth.

    Return the sauce into the pan with the remaining mushrooms. Bring the sauce to a boil before removing from the heat.

    Spoon enough mushroom sauce into the bottom of an 11x9-inch casserole dish to cover it with a thin layer of the mushroom sauce.

    Place half the green beans in the casserole dish and add half of the remaining mushroom sauce. Repeat until you have used all the green beans and the sauce.

    Pour ½ a cup of water over the top before sealing tightly with aluminum foil.
