Healthy White Chicken Chili

If you’re in need of a meal that comforts, you can’t go wrong with this Healthy White Chicken Chili recipe. This is a great recipe to make for family and friends too. I’m all about the hearty stew and chili recipes, and this one is filling, flavorful, and fool-proof delicious. 

Start by sautéing the onions and garlic in a Dutch oven. If you don’t have one, use a heavy bottom pot. It works well too. Then add the spices and seasonings, large white beans, broth, chilies, corn, and chicken and allow the chili to simmer for 20 minutes. Once the chicken is cooked through, shred it and return it to the pot. Finally, stir in the lime juice, chopped cilantro, and yogurt. Simple as can be and totally delicious. Just serve this white chicken chili with your favorite toppings and a side of crusty bread and enjoy!

    Preheat a large Dutch oven or heavy bottom pot on medium-high heat, add 1 tablespoon vegetable oil and swirl to coat. Add 1 diced onion and 2 minced garlic cloves and sauté for 3 minutes, stirring occasionally.

    Add 1 teaspoon cumin, ½ teaspoon oregano, ½ teaspoon chili powder, ⅛ teaspoon cayenne pepper, 1 teaspoon salt, and black pepper to taste and cook, stirring constantly, for 30 seconds.
