1 tbsp Vegetable oil
1 Onion small, diced
2 cloves Garlic minced
1 tsp Cumin
½ tsp Oregano
½ tsp Chili powder
⅛ tsp Cayenne pepper
1 tsp Salt
Black pepper ground , to taste
2 (15-oz) cans Great Northern beans drained and rinsed
3 cups Chicken broth low sodium
2 cups Corn
1 (4-oz) can Green chili diced
1 ½ lbs Chicken Breast or 3 medium, boneless and skinless
1 Lime juiced
1 bunch Cilantro small, finely chopped
½ cup Greek yogurt plain, fat 2%+

Healthy White Chicken Chili


If you’re in need of a meal that comforts, you can’t go wrong with this Healthy White Chicken Chili recipe. This is a great recipe to make for family and friends too. I’m all about the warm soup and chili recipes, and this one is filling, flavorful, and fool-proof delicious. 

Start by sautéing the onions and garlic in a Dutch oven. If you don’t have one, use a heavy bottom pot. It works well too. Then add the spices and seasonings, large white beans, broth, chilies, corn, and chicken and allow the chili to simmer for 20 minutes. Once the chicken is cooked through, shred it and return it to the pot. Finally, stir in the lime juice, chopped cilantro, and yogurt. Simple as can be and totally delicious. Just serve this white chicken chili with your favorite toppings and a side of crusty bread and enjoy!

Steps to make Healthy White Chicken Chili


Sauté the onions and garlic


Preheat a large Dutch oven or heavy bottom pot on medium-high heat, add 1 tablespoon vegetable oil and swirl to coat. Add 1 diced onion and 2 minced garlic cloves and sauté for 3 minutes, stirring occasionally.


Add spices and seasonings


Add 1 teaspoon cumin, ½ teaspoon oregano, ½ teaspoon chili powder, ⅛ teaspoon cayenne pepper, 1 teaspoon salt, and black pepper to taste and cook, stirring constantly, for 30 seconds.


Mash white beans


In a small bowl, mash with a fork about 1 cup of beans to thicken the chili.


Add broth, beans, corn, chilies, and chicken


Add 3 cups low-sodium chicken broth, mashed and whole beans, 2 cups corn, 1 (4-oz) can diced green chilies, and 1 ½ pounds chicken breasts. Cover the pot and bring to a boil. Once at a boil, reduce heat to medium-low and simmer for 20 minutes.


Shred chicken


Turn off the heat. Remove the chicken from the pot and use 2 forks to shred the meat.


Add chicken, lime juice, cilantro, and yogurt


Return the chicken to the pot. Stir in the lime juice, finely chopped cilantro, and ½ cup Greek yogurt.



Serve warm with your favorite toppings like tortilla chips, avocado, more yogurt, fresh chopped cilantro, and lime.
