To make this traditional drink at home, start by soaking rice, almonds, and cinnamon in water in the fridge overnight. The next steps are pretty easy too. Blend rice mixture using a high-speed blender and then strain twice or three times through a very fine mesh sieve for a smooth taste. Serve with ice and an additional pinch of cinnamon if you wish!
To make the Horchata – Dairy-Free Mexican Drink, you will need the following ingredients:
In a large bowl or pitcher, combine 3 cups water with 1 cup rinsed rice, ½ cup slivered almonds, and 1 broken cinnamon stick.
Mix to combine, cover and leave to soak in the fridge for at least 4 hours, or preferably overnight.
After soaking, pour the mixture into a blender and blend until smooth for about 3 minutes.
Place a fine mesh strainer over a bowl or pitcher. Pour blended mixture through the strainer two or three times until the liquid is creamy and smooth. Use a spoon to push the liquid through.
Add remaining 3 cups water, ½ cup sugar, and 1 tablespoon vanilla extract. Mix to combine and add more sugar if needed.
