1 (10 oz) can Diced tomatoes and green chiles undrained
1 (10 oz) can Red enchilada sauce
⅓ cup fresh Cilantro chopped
1 tbsp fresh Lime juice
2 tbsp Water
1 (16 oz) can Pinto beans rinsed and drained
Cooking spray
4 Large eggs
4 (8 inch) flour Tortillas fat-free
1 cup Queso fresco cheese crumbled

While Huevos Rancheros with Queso Fresco is generally served as a breakfast dish consisting of fried eggs, tortillas and fresh salsa made of tomatoes, chili peppers, onion, and cilantro, I like to make this as a quick and easy midweek dinner. In this recipe, I add pinto beans as an accompaniment to the eggs to make a more filling meal. Crumbled queso fresco as a garnish adds a freshness to the whole dish.

Begin these huevos rancheros by heating tomatoes and enchilada sauce together in a saucepan. Mix in cilantro and lime juice. Heat the pinto beans in the microwave before frying the eggs in a large skillet. Warm the tortillas and assemble the huevos rancheros.

Steps to make Huevos Rancheros with Queso Fresco


Heat tomatoes and enchilada sauce


Bring tomatoes and enchilada sauce to a boil in a medium saucepan over high heat. Reduce heat and simmer for five minutes until the sauce thickens.


Add lime juice


Remove the saucepan from the heat and stir in ⅓ cup of chopped fresh cilantro and 1 tablespoon of lime juice.


Heat beans


Place the pinto beans in a microwave-safe bowl with 2 tablespoons of water. Mash the beans partially with a fork. Cover the bowl and heat in the microwave for 2 minutes on high heat.


Cook eggs


Coat a large nonstick skillet with cooking spray and place on the stove over medium-high heat. Add the eggs to the skillet and cook for at least a minute on each side until the eggs reach your desired degree of doneness.


Warm tortillas


Warm the tortillas according to the directions on the package.


Drain again


Spoon about ⅓ cup of beans over each tortilla and spread out. Place a fried egg on each of the tortillas.


Add sauce and cheese


Pour about ½ cup of sauce around each of the eggs and sprinkle each one with ¼ cup of crumbled queso fresco.



Enjoy these huevos rancheros exactly as they are or add extras like sour cream and avocado.
