Warm Kale and Caramelized Mushroom Salad is a really great winter salad. Who says salad has to be chilled? A warm salad can make a really delicious meal in winter. For this recipe, I use assorted mushrooms such as beech mushroom and champignon. Also you can use porcini, shiitake cremini, chanterelle or oyster. If any of the mushrooms have a woody stem, I trim them off and thinly slice the mushrooms.
I start this salad by sautéing mushrooms in oil. Then I add butter and shallots and continue to cook them until the shallots are soft and translucent. I then add sherry and once it has almost fully evaporated, I remove the skillet from the heat. I make a dressing from olive oil with the sherry vinegar, mustard, and honey. I then assemble the salad and top with goat cheese. Delicious!
To make Warm Kale and Caramelized Mushroom Salad, you will need the following ingredients:
Sauté 1 pound of assorted mushrooms in a skillet with 2 tablespoons of oil for about 10 minutes, stirring occasionally. Reduce the heat if the oil becomes too hot.
Add 1 tablespoon of butter and 2 sliced medium shallots to the skillet. Sauté for about 4 minutes until the shallots are soft. Season to taste with salt and pepper.
Pour ¼ cup of dry sherry into the skillet and cook while stirring until the liquid is mostly evaporated. Remove from heat and set aside, but keep warm.
In a small bowl, mix ¼ cup plus 2 tablespoons of olive oil with 3 tablespoons of sherry vinegar, 2 teaspoons of mustard and 2 teaspoons of honey.
Toss 4 cups of kale with enough dressing to lightly coat it in a large salad bowl. Add the warm sautéd mushrooms and toss again. Pour in more dressing until all the ingredients are lightly coated.
Garnish with 3 ounces of crumbled goat cheese and with extra dressing on the side.
