Prepare lavender syrup

In a saucepan, bring water, sugar and dried lavender to a boil. Stirring occasionally, cook for 1 minute until the sugar dissolves. Remove from the heat and let stand 10 minutes.

Drain and chill syrup

Strain syrup through a sieve into a small bowl, discarding of the lavender bits and any solids. Refrigerate to chill.

Prepare gelatin

In a small bowl, sprinkle 1 tablespoon water over the gelatin and let stand for 1 minute until the gelatin dissolves.

Combine wet ingredients

In a separate, medium sized bowl, whisk the honey, cornstarch, salt and egg yolks together until well combined.

Heat milk

In a small, heavy saucepan over a medium-high heat, bring the milk to a 180° heat until tiny bubbles form around the edges (without boiling).

Combine wet ingredients and milk

Gradually add the heated milk to the wet ingredients, stirring with a whisk.

Cook mixture

Return mixture to the saucepan and cook over a medium heat for 2 minutes, stirring continuously until thick and bubbly. Remove from the heat.

Add gelatin

Add the water-gelatin mix, stirring well to mix.

Pour the mixture into a bowl and allow to cool for about 20 minutes. Stir occasionally until the mixture has cooled but not set.

Add yoghurt

Add yoghurt and stir to mix through.

Portion and chill

Into 6 dessert glasses or bowls, pour ¼ cup of the mixture. Cover and refrigerate for at least 2 hours to chill.

Once chilled, garnish with ¼ cup fresh strawberries and drizzle with 2 tablespoons of lavender syrup on top of each serving.
