1 lb Chicken Breast boneless skinless or thighs
1 tbsp Olive oil
3 cups Salsa verde
3 cups Chicken broth
½ Onion small, chopped
3 Green onion chopped
½ cup Cilantro chopped
3 cloves Garlic minced
2 Jalapeño pepper diced, ribs and seeds removed
½ tsp Salt plus more to taste
Optional topping:
1–2 Lime wedges
Cotija cheese crumbled

This tasty meal is jam-packed with protein and flavor. It is easy to prepare, and thanks to the Instant Pot, you can do something else as the ingredients cook away. 

This is such a simple recipe, and it is a superb use of the Instant Pot. To prepare this delicious dish, start by adding everything to your Instant Pot. Cook the ingredients for 20 minutes on the “Soup” setting. Quick release the steam and stir up the mixture. Add more salsa verde to taste. Serve this tasty dish with rice, cotija cheese and a squeeze of lime!

Place ingredients in Instant Pot

Place 2 cups of dried lentils, 1 pound of chicken, 3 cups of salsa verde, 3 cups of broth, ½ a small chopped onion, 3 chopped green onions, ½ a cup of chopped cilantro, 3 cloves of minced garlic, 2 diced jalapeños and 1 tablespoon olive oil in the Instant Pot. Season to taste with salt.

Set the Instant Pot to the soup setting. Cook for 20 minutes.

Quick release the steam from the Instant Pot.

Shred chicken

Shred chicken with two forks.

Stir and add salsa verde

Serve with rice and crumbled cotija cheese and a squeeze of lime.
