This recipe is easy to put together. First, rinse, scrub, and pat dry the sweet potatoes. Place them on a baking sheet and poke holes all over using a fork or a knife. Then rub with a little olive oil and bake. Baking the sweet potatoes takes about 45 minutes at 400 °F. While the potatoes are baking, sauté the kale until slightly wilted. Once the sweet potatoes are tender, remove them from the oven and carefully slice each in half lengthwise. Fluff the insides and top each half with the sautéed kale, crumbled feta, and walnut pieces. Place 4 sweet potatoes on a baking sheet. Prick each sweet potato with a fork and rub all over with a little olive oil.
