This recipe is so easy to follow and feeds a little crowd so it’s always a great party option. So, when life gives you a Mexican themed dinner party, make this cheesy, creamy and spicy chicken casserole!
To make Mexican Chicken Salsa Casserole, you will need the following ingredients:
Wash 8 ounces of uncooked rice and place it inside a casserole dish with 8 ounces of beans and 8 ounces of corn.
Season with 1 teaspoon cayenne pepper, 1 teaspoon black pepper, 2 teaspoons salt, 2 teaspoons oregano.
Pour in 2 cups tomato sauce and 1 cup chicken broth and then gently stir everything to mix together well.
Place 3 chicken breasts on top of the rice mixture and season with salt and pepper.
Preheat the oven to 350 °F.
Cover the dish with silver aluminum foil and bake in the preheated oven for about 90 minutes.
Remove from the dish the oven and sprinkle 3 ounces of grated cheese over the top then return to the oven for the cheese to melt. Take care not to brown the cheese.
Serve hot and enjoy!
