Recipe Description

This Microwave Potato Soup recipe is the answer to all your prayers. It’s a simple soup that you can make from scratch in under 10 minutes. All you need at your disposal is a microwave and a microwave safe mug!

Start by cooking the potatoes in water in the microwave. Drain the cooking water and add bacon, cheese, onion and cornstarch. The cornstarch will thicken the soup nicely. Pour in stock and milk. Season with salt and pepper and cook in the microwave until the soup thickens. Top with a dollop of sour cream and a sprinkle of bacon and chives. Enjoy!

    Cook potatoes

    Place 3 tablespoons of potato cubes in a large microwaveable mug with ¾ cup of water. Cook in the microwave for 3-4 minutes, until the potatoes are soft. Check the potatoes half way through and stir to ensure even cooking.
