Start by cooking the potatoes in water in the microwave. Drain the cooking water and add bacon, cheese, onion and cornstarch. The cornstarch will thicken the soup nicely. Pour in stock and milk. Season with salt and pepper and cook in the microwave until the soup thickens. Top with a dollop of sour cream and a sprinkle of bacon and chives. Enjoy!
To make Microwave Potato Soup, you will need the following ingredients:
Place 3 tablespoons of potato cubes in a large microwaveable mug with ¾ cup of water. Cook in the microwave for 3-4 minutes, until the potatoes are soft. Check the potatoes half way through and stir to ensure even cooking.
Once the potatoes are cooked, pour away the cooking water.
Stir in 1 tablespoon of cooked bacon, 2 tablespoons of Cheddar cheese and 1 tablespoon of chopped onion. Stir through 2 teaspoons of cornstarch.
Pour in ½ a cup of stock and ¼ cup of milk. Season to taste with salt and pepper.
Cook the soup in the microwave for 2½ - 3 minutes. Check occasionally to ensure the soup doesn’t overcook. Remove from the microwave once the soup has thickened.
Serve with a dollop of sour cream on top and a sprinkle of bacon and chives.
