Mini Quiche with Spinach

Share

In my opinion, the best snack to have on standby is a Mini Quiche with Spinach. I make mine with my own homemade wonton wrappers meaning that they are a slightly lighter version of regular mini quiches which tend to have a pastry crust.

If you make these mini quiches, start by pressing wonton wrappers into a lightly greased muffin cup. You need to ensure maximum coverage of the muffin cup so I find it helps to turn the pan before pressing in the second wrapper. Whisk the eggs together with the roasted peppers, spinach, milk and seasoning. Divide between the muffin cups and bake for 20-25 minutes. Enjoy warm.

To make my Mini Quiche with Spinach, you will need the following ingredients:

Ingridiens for Mini Quiche with Spinach

Steps to make Mini Quiche with Spinach

1

Heat the oven and prepare a muffin pan

4

Preheat the oven to 350 °F. Lightly grease a 6 cup muffin pan with cooking spray.

2

Place wonton wrappers in muffin cups

2

Place a wonton wrapper into the bottom of each muffin cup and press down. Place a second wonton wrapper into the muffin cups at an angle to ensure the two wrappers do not overlap each other.

3

Make filling

2

Place 3 eggs, ½ a cup of roasted red peppers, ½ a cup of spinach, ¼ cup of milk, ½ a teaspoon of salt and ⅛ teaspoon of black pepper in a bowl. Whisk until fully combined.

4

Place filling in muffin pan

2

Divide the egg and spinach filling between 6 cups of the muffin pan. About ¾ full each muffin cup.

5

Bake

20

Bake the mini quiches for 20-25 minutes in the oven until the center is fully set. Leave to cool for 5 minutes in the pan before removing them.

6

Serve

Serve immediately while warm.

Came from the easy wonton soup and made both at the same time, this does not go well with anything warm..or maybe it was just the spinach in it.
