Morning Glory Muffins
These Morning Glory Muffins really are delicious and healthy too. In the recipe, I suggest using a mix of whole wheat flour with buckwheat or spelt flour. You can use all whole wheat if you don’t have spelt or buckwheat flour. A combination of carrots, apple, coconut, nuts, and sunflower seeds help to keep these muffins moist but add a pleasant crunch too.
To make these muffins, start by combining dry ingredients together before mixing in carrots, apple, coconut, nuts, and sunflower seeds. In a separate bowl, combine wet ingredients and pour them into the bowl with the dry ingredients. Mix them together and divide the batter between 12 muffin cups. Sprinkle the top with granola and bake in the oven. Enjoy!
To make Morning Glory Muffins you will need the following ingredients:

These are really good with some coffee though so are the apple churros, but it's not as healthy.
Loved them!! Thank you Lilly for your always quality meals, me and my kids devoured this up right after super.
Instead of reading delicious I read malicious haha nonetheless they are really good, simple and affordable to make which is exactly what I was looking for.
I already made some of the other muffin recipes here like the Irish soda bread muffins and the pumpkin cream ones, this one seems good as well so I'll try them out!
Well, I can see why they're called ''morning glory'' muffins. A fitting name indeed.
Now this is quite the healthy treat, I'm loving them and so does my family. Thank you!!
I'm not thrilled about them but they were good at least, though they felt kinda dry.
Doesn't have to be complicated in order to be good, this is a perfect example of how something easy to make can be good. Thank you for sharing.
