Though this recipe features vegan ingredients, such as vegetable oil and almond milk, you can also easily replace them with dairy alternatives.  

To start this recipe, spray a mug or ramekin with non-stick cooking spray. For better presentation, use a ramekin to make and serve this coffee cake, as the cake won’t completely fill up a mug. Mix all of the ingredients together and sprinkle the top with sugar and cinnamon. Microwave on high for 45 seconds until the dough puffs and looks dry. Spray a mug or ramekin with non-stick cooking spray.

Combine ingredients

Add 1 tablespoon granulated sugar, 2 ½ tablespoons all-purpose flour, ⅛ teaspoon salt, ¼ teaspoon baking powder, 1 tablespoon vegetable oil, 1 tablespoon almond milk, and ⅛ teaspoon vanilla extract and stir until combined.

Sprinkle with sugar and cinnamon
