These Mushroom Ham and Goat’s Cheese Pancakes make a regular appearance in my kitchen. These are definitely not just a Pancake Tuesday recipe! They are perfect for lunch while working from home or as a tasty midweek dinner when you’ve had a busy day. Amazing!

For a nutritious Shrove Tuesday recipe, start by making a typical pancake batter from flour, salt, eggs and milk. Chill the batter in the refrigerator. Once chilled, fry the pancakes in a skillet with hot oil. Serve each pancake filled with sautéed mushrooms, a slice of ham and a slice of goat’s cheese. Yum!

Steps to make Mushroom Ham and Goat’s Cheese Pancakes

Make pancake batter

Place 3 ounces of plain flour in a large bowl with a pinch of salt, 2 large eggs and ⅛ pint of milk. Whisk well until the mixture is lump free. Add the remaining milk and whisk again until completely smooth.

Chill batter

Transfer the batter to a large pitcher. Chill in the refrigerator for up to 8 hours until ready to use.

Sauté mushrooms

Sauté 220 grams mushrooms in a pan with oil over medium heat.

Prepare a pan

Place an 8-inch nonstick frying pan over medium-high heat. Once hot, drizzle a bit of oil in the center of the pan. Wipe the oil around the pan using a kitchen towel.

Cook pancakes

Pour a little of the batter into the pan and tilt the pan in each different direction to spread the batter thinly and evenly over the base. Fry for 2 minutes until the top is set and the underneath is golden brown. Flip the pancake and cook the other side for 1-2 minutes more.

Repeat

Use the remaining batter and a little more oil to cook 7 more pancakes in the same way. Transfer the cooked pancakes to a plate and place parchment paper between each one to keep them warm.

Fill pancakes

Fill each pancake with sautéed mushrooms, a slice of ham and top with some goat’s cheese.

Grill

Roll up each pancake to enclose the filling. Place them under a hot grill until the cheese melts.

Serve

Serve garnished with chopped flat leaf parsley.
