⅔ cup Orzo pasta regular , or dried whole wheat
1 cup Corn kernels fresh or frozen
2 cups Chicken Breast shredded or chopped cooked
1 cup Grape tomatoes halved
¼ cup Cilantro snipped fresh
½ cup Feta cheese crumbled reduced-fat
For the dressing:
1 Avocado small , seeded, peeled, and cut up
⅓ cup Water
½ tsp Lime zest finely shredded
¼ cup Lime juice
4 cloves Garlic minced
½ tsp Crushed red pepper
¼ tsp Salt

Orzo Chicken Salad with Avocado-Lime Dressing is one of my favorite make ahead recipes! A make ahead recipe does exactly what it says on the tin. You can make it in advance and assemble it when you are ready to eat. If you are making it in advance, simply make the dressing and the salad and store them in two separate containers until you are ready to serve your salad. 

Start by cooking the orzo and corn. Drain these and place them in a large salad bowl. Add the remaining salad ingredients and sprinkle the feta cheese over the top. Blend the avocado, water; lime peel and juice; garlic, crushed red pepper and salt together in a food processor until you have a smooth creamy dressing. Right before serving, drizzle the avocado dressing over the salad.

Cook the orzo and corn

Follow the directions on the orzo pack to cook it. During the last minute of cooking, add the corn. When it’s cooked, drain and transfer to a large serving bowl.

Assemble the salad

Add the chicken, tomatoes, and cilantro to the orzo and corn mixture. Sprinkle with the crumbled feta cheese.

Chill the salad

Place the salad in the refrigerator for a minimum of 2 hours.

Prepare the dressing

Blend the avocado, water; lime peel and juice; garlic, crushed red pepper and salt together in a food processor until you have a smooth creamy dressing.

Place the dressing in a small bowl and chill in the refrigerator for at least 2 hours.

Drizzle the salad with dressing just before serving.
