
Orzo Chicken Salad with Avocado-Lime Dressing is one of my favorite make ahead recipes! A make ahead recipe does exactly what it says on the tin. You can make it in advance and assemble it when you are ready to eat. If you are making it in advance, simply make the dressing and the salad and store them in two separate containers until you are ready to serve your salad.
Start by cooking the orzo and corn. Drain these and place them in a large salad bowl. Add the remaining salad ingredients and sprinkle the feta cheese over the top. Blend the avocado, water; lime peel and juice; garlic, crushed red pepper and salt together in a food processor until you have a smooth creamy dressing. Right before serving, drizzle the avocado dressing over the salad.
