For the pork cutlets:
4 Pork chops boneless loin , ½-inch thick
8 Crackers saltine, finely crushed , â…“ cup
½ cup Bisquick mix original
½ tsp Ground paprika
ÂĽ tsp Black pepper
Eggs
1 tbsp Water
Cooking spray
For the apple slaw:
4 cups Coleslaw mix
1 (1 cup) Apples small, Granny Smith or tart red apple, coarsely chopped
ÂĽ cup Onion chopped
â…“ cup Salad dressing
â…› tsp Celery seed

This Oven-Fried Pork Cutlets with Apple Slaw recipe is one of my favorite midweek recipes because it is so quick and simple to make. The chops are coated in a crunchy saltine cracker crumb and the slaw is crunchy and sweetened with apple. 

To make this pork dish, start by flattening the chops. Make the cracker crumb and place it in a small bowl. Beat some egg with water in another bowl. Dip the chops into egg, then coat with the crumb. Repeat dipping coated pork in egg and in the crumb mixture. Place in a pan and spray the tops of pork generously with cooking spray. Bake in the oven for 20 minutes until golden brown. Toss all of the slaw ingredients together and serve.

Steps to make Oven-Fried Pork Cutlets with Apple Slaw

Heat oven and prepare a baking dish

Preheat the oven to 425 °F. Spray a 15x10-inch baking dish with cooking spray.

Flatten chops

Flatten each pork chop to about ÂĽ-inch thick by bashing it between two sheets of parchment paper.

Make crumb coating

Mix 8 crushed saltine crackers with ½ cup original Bisquick mix with ½ a teaspoon of paprika and ¼ teaspoon of pepper in a shallow bowl.

Beat egg and water

In a separate shallow dish, beat 1 egg with 1 tablespoon of water.

Crumb the chops

Dunk each pork chop into the egg mixture before dipping it into the Bisquick crumb mixture. Repeat the dipping process for each pork chop.

Place pork in baking dish

Place each chop in the dish and spray the tops generously with cooking spray.

Bake

Bake the chops in the oven for about 20 minutes until golden brown and cooked through.

Make slaw

Mix all of the slaw ingredients in a bowl until fully combined.
