This Oven-Fried Pork Cutlets with Apple Slaw recipe is one of my favorite midweek recipes because it is so quick and simple to make. The chops are coated in a crunchy saltine cracker crumb and the slaw is crunchy and sweetened with apple. 

To make this pork dish, start by flattening the chops. Make the cracker crumb and place it in a small bowl. Beat some egg with water in another bowl. Dip the chops into egg, then coat with the crumb. Repeat dipping coated pork in egg and in the crumb mixture. Place in a pan and spray the tops of pork generously with cooking spray. Bake in the oven for 20 minutes until golden brown. Toss all of the slaw ingredients together and serve.

    Mix 8 crushed saltine crackers with ½ cup original Bisquick mix with ½ a teaspoon of paprika and ¼ teaspoon of pepper in a shallow bowl.

    In a separate shallow dish, beat 1 egg with 1 tablespoon of water.
