240 g whole wheat Fusilli pasta
1 knob Butter
1 Shallots large, finely chopped
140 g Frozen peas
2 fillets Salmon skinless, cut into chunks
140 g Crème fraîche low fat
½ cube Vegetable stock low salt
1 bunch Chives small, snipped
50 ml Water
Black pepper freshly ground, to taste

This Pasta with Salmon & Peas is the best midweek recipe I know. It takes just 5 minutes prep and it cooks in just 10-12 minutes. My kids adore it too, although I must admit that sometimes more peas end up on the floor than in their mouths! You won’t be sorry if you try this recipe!

Start by cooking pasta according to the package directions. As the pasta cooks, start making the sauce by sautéing shallot in melted butter. Add peas and chunks of salmon fillet along with creme fraiche and water. Cook the sauce for a few minutes before stirring in chopped chives and seasoning with black pepper. Coat the pasta with the sauce and serve immediately.

Steps to make Pasta with Salmon & Peas

Cook the pasta

Bring a pan of water to a boil. Cook the pasta in the boiling water according to the instructions on the package.

Sauté shallot

As the pasta cooks, melt 1 knob of butter in a saucepan. Add 1 large finely chopped shallot and sauté in the butter for 5 minutes until softened.

Add peas, salmon, crème fraîche and water

Stir in the frozen peas, chunks of 2 skinless salmon fillets, low fat crème fraîche and 50 milliliters of water. Crumble in ½ a low salt vegetable stock cube.

Cook and add chives

Cook the sauce while stirring for 3-4 minutes before stirring in a small bunch of snipped chives. Season to taste with black pepper.

Mix sauce with pasta

Drain the pasta and stir through the sauce until it is evenly coated.

Serve

Serve immediately in large pasta bowls.
