Like most kids, my children don’t love their veggies but this Pea Pesto Pappardelle helps with the dinner battles. With thanks to the combination of smooth ricotta and lemon zest that compliment the pea flavor served with Italian pappardelle pasta, no one says no to this one!

Use a simple seasoning of salt and pepper to have dinner ready in minutes!

To make Pea Pesto Pappardelle, you will need the following ingredients:

Steps to make Pea Pesto Pappardelle

Cook pappardelle

Cook 12 oz of pappardelle pasta according to the package instructions. Drain and reserve ½ cup of the cooking water. Return the cooked pasta to the pot.

Pulse peas

In a food processor, pulse 1 cup of peas to chop a bit.

Add ricotta and zest

Add ½ cup of ricotta cheese and 1 teaspoon of lemon zest to the food processor. Pulse a few times to combine into a pesto then season with salt and pepper.

Toss pesto with pasta

Add the pesto along with remaining ½ cup of peas and ½ cup of reserved cooking water to the pot with cooked pasta. Toss to coat pasta in sauce.

Serve

Garnish with sprinkles of chopped chives for serving.
