1 tsp Instant yeast dried
50 g Unsalted butter
200 ml Milk reduced fat
1 Eggs beaten
For filling:
20 g Unsalted butter softened
60 g Sugar
1 tsp Cinnamon ground
1 Pears Conference pear, peeled, cored, diced
100 g Walnuts finely chopped
2 tbsp Apricot jam
1 tsp Water

These Pear Breakfast Buns are great for any fall and winter occasion! You can make these sweet fruit-filled buns for breakfast, brunch, or a sweet snack. It’s true that these buns require some time kneading and rising, but they are totally worth it. Filled with juicy pears, warming cinnamon, and crunchy walnuts and finished off with an apricot glaze, these buns make for the perfect holiday breakfast!

To make these melt-in-your-mouth delicious buns, first, mix flour and salt. Make a well in the center and add sugar and yeast. Pour in warmed milk with melted butter and mix to form a dough. Knead the dough until smooth, and then let it rest until doubled in size. Now it’s time to shape the buns. Roll the dough out to a rectangle and spread the dough with softened butter, and sprinkle on sugar, cinnamon, walnuts, and pears. Roll the dough and cut into eight even pieces. Arrange the buns in a baking pan and let rise. Once raised, bake right away. Then just glaze, eat, and enjoy!

Combine dry ingredients

In a large bowl, mix 475 grams flour and 1 teaspoon salt. Make a well in the center and add 20 grams sugar and 1 teaspoon instant dried yeast.

Melt butter

In a saucepan, place 50 grams butter and 200 milliliters milk and heat until the butter is melted.

Pour wet ingredients into dry

Add the butter mixture and 1 egg to the flour mixture and mix to form a dough.

Knead dough

Knead the dough by hand on a lightly floured surface for 10 minutes until the dough is smooth and bouncy.

Prove dough

Transfer the dough into a lightly oiled bowl and cover with oiled plastic wrap. Let sit in a warm place for 2-3 hours or until doubled in size.

Prepare baking pan

Lightly grease a 9-inch round springform pan.

Roll out dough

Once the dough has doubled in size, roll it out on a lightly floured surface into a ½-inch thick rectangle, roughly 15 x 9-inch.

Add filling to buns

Spread 20 grams of softened butter on top. Sprinkle 60 grams sugar, 1 teaspoon cinnamon, 1 diced pear, and 100 grams chopped walnuts evenly over the dough.

Shape into buns

Roll up the dough tightly into a log. Trim the ends and cut the log into 8 even slices. Place 7 buns around the edge of the pan and 1 in the middle.

Rise buns

Cover the pan with oiled plastic wrap and leave in a warm place for up to 1 hour or until doubled in size.

Heat oven

Preheat the oven to 375 °F.

Remove the plastic wrap and bake the buns on a baking tray for 25 minutes.

Make the glaze

In a saucepan, melt 2 tablespoons jam with 1 teaspoon water.

Brush the glaze over the still-warm buns. Remove the buns from the springform pan while they are still warm to prevent them from sticking to the pan.
