Pear Cake with Cinnamon Sugar

Steps to make

   Heat the oven and prepare a baking pan

   Preheat the oven to 400 °F and place a shelf in the middle of it. Lightly grease a 9-inch baking pan and line with a round piece of baking parchment paper, dust with flour. Tap out any excess flour.

   Combine dry ingredients

   Place 1 cup all-purpose flour, ¼ cup of sugar, 1 teaspoon of baking powder and ⅛ teaspoon of salt in a food processor. Pulse until blended.

   Add butter

   Add ¼ cup of butter pieces and pulse until the mixture resembles coarse meal.

   Mix wet ingredients

   Lightly beat ¼ cup of milk, 1 large egg, and 1 teaspoon of vanilla with a fork until fully combined. Add the milk mixture to the bowl of the food processor. Process until a smooth batter forms.

   Transfer batter to baking pan

   Transfer the cake batter to the prepared baking pan. Smooth the batter using the back of a spoon.

   Slice pears

   Cut the pears in half. Remove the cores and the stem ends. Slice the pear halves into ¼-inch thick slices.

   Make cinnamon sugar

   Mix 3 tablespoons of sugar with 1 teaspoon of cinnamon until combined.

   Top the cake

   Arrange the pears on the batter in a circular pattern. Make sure the slices overlap slightly and cover the batter. Sprinkle the top of the cake with the cinnamon sugar.

    Bake

    Bake in the oven for 30 minutes until a toothpick inserted in the center comes out clean and the edges are golden brown.

    Cool cake

    Let the cake cool in the baking pan for around 10 minutes before removing from the pan.

    Serve warm slices of this cake with freshly whipped cream.
