Next, generously grease the cast-iron skillet. Combine the cornstarch with lemon juice and then whisk in the sugar and cinnamon. Toss the sliced pears with the prepared cornstarch mixture and pour the fruit filling into the skillet. Next, make the cinnamon streusel topping. This topping consists of oats, brown sugar, flour, cinnamon, nutmeg, and butter. Sprinkle the topping over the fruit and bake until the topping is crisp and the fruit is bubbling up.
