I love to make this Pepperoni and Sweet Pickle Pizza – it has become my Friday night go-to treat to unwind after a long week. The recipe below makes one pizza, but if your house is anything like mine, one pizza is never enough! Simply double the toppings and sauce to make two pizzas. If you use a baking stone or steel, place it in the bottom third of the oven before you start preheating.
To make this pizza, start by stretching or rolling out pizza dough to a 12- to 14-inch circle.
Spread the sauce out evenly over the dough, leaving a ½-inch border all around. Top with half of the cheese, then the pepperoni and pickles. Sprinkle over the remaining cheese. Bake in the oven until the crust is golden and the cheese is bubbling. Remove the pizza from the oven and leave to cool for a few minutes before serving.
To make these Pepperoni and Sweet Pickle Pizza, you will need the following ingredients:
Preheat the oven to 500 °F.
Transfer the dough to a lightly floured work surface. Stretch or roll it flat with a rolling pin until you have a 12-14 inch circle. Transfer the dough circle to an oiled or parchment-lined baking sheet or a lightly floured pizza peel (if using a baking stone/steel).
Spread the pizza sauce out evenly over the dough, leaving ½ inch of dough around the edge.
Scatter half of the cheese over the sauce. Sprinkle the pepperoni and pickles over the cheese evenly. Finish with the remaining cheese.
Transfer to the oven and bake for 8-10 minutes until the crust is golden and the cheese is bubbly and browned in spots.
Leave the pizza cool for a few minutes before slicing and serving.
