This particular Perfect Pear Jam recipe takes a little bit of time investment but worth all the wait! I suggest leaving the pear mixture to soak in all the goodness from the sugar, lemon juice and lemon zest, before boiling it to make your homemade jam. Combine ingredients

In a large bowl, coat pears with lemon zest, lemon juice, and sugar and stir well to combine everything.

Rest pears

Cover and allow mixture to sit on the counter at least 1-8 hours, or overnight, to absorb all the flavors.

Boil pear mixture

Transfer rested pears to a heavy-bottomed, non-reactive pan and over medium-high heat, bring the mixture to a boil. Cook for 10 minutes, stirring occasionally, preventing any sticking to the base of the pan and reducing foam accumulation.

Mash pear mixture

Once soft, mash the pear chunks with a potato masher. For a completely smooth jam, mash completely.

Second boil

Boil again, for a further 5-15 minutes, stirring occasionally, until the jam reaches a temperature of 220°F and thickens.

Transfer to jars

Once jam has reached desired thickness, pour mixture into hot, sterilized jars, leaving ¼-inch space from the top. Burst any air bubbles by pressing the jam firmly into the jar.

Refrigerate

Seal with tight fitting lids and store in the refrigerator for 3 months or freeze for up to 6 months.

Remove any excess from the rims of the jars and seal. Place jars in water bath, submerging them completely into the boiling water for 15 minutes to process. Remove with tongs.

Rest to cool completely before storing them in a dry, cool place.
