This particular Perfect Pear Jam recipe takes a little bit of time investment but worth all the wait! I suggest leaving the pear mixture to soak in all the goodness from the sugar, lemon juice and lemon zest, before boiling it to make your homemade jam.     In a large bowl, coat pears with lemon zest, lemon juice, and sugar and stir well to combine everything.

    Cover and allow mixture to sit on the counter at least 1-8 hours, or overnight, to absorb all the flavors.

    Transfer rested pears to a heavy-bottomed, non-reactive pan and over medium-high heat, bring the mixture to a boil. Cook for 10 minutes, stirring occasionally, preventing any sticking to the base of the pan and reducing foam accumulation.

    Once soft, mash the pear chunks with a potato masher. For a completely smooth jam, mash completely.

    Once jam has reached desired thickness, pour mixture into hot, sterilized jars, leaving ¼-inch space from the top. Burst any air bubbles by pressing the jam firmly into the jar.

    Seal with tight fitting lids and store in the refrigerator for 3 months or freeze for up to 6 months.
