Ingredients

For the scones:
2 cups All-purpose flour
¼ cup Granulated sugar
1 tbsp Baking powder
1/8 tsp Salt
6 tbsp cold Unsalted butter into ¼-inch cubes
1 cup Heavy cream
1 tbsp Heavy cream for brushing the scones
1 tsp Vanilla extract
1 cup Strawberries chopped
2 tbsp Turbinado sugar
For the vanilla glaze:
1½ cups Confectioners' sugar
2 tbsp Milk
½ tsp Vanilla extract

These Strawberry Scones are a great way to use up the strawberries growing in your garden. Have you ever found that you wait ages for strawberries to ripen and then suddenly, they all seem to ripen at once! When you find yourself in a situation where you have more strawberries than you know what to do with, here’s an idea: make these strawberry scones!

Start by combining dry ingredients. Cut in the butter until you have a mixture that resembles coarse bread crumbs. Add cream and vanilla and bring the dough together in a ball. Be careful at every stage that you do not overwork the dough. Work quickly so the butter doesn’t get warm. Shape into scones and bake. As the scones cool, make a glaze by combining confectioners’ sugar, milk and vanilla.

Steps to make Perfect Strawberry Scones

Heat oven and line a baking sheet

Preheat the oven to 400 °F. Line a baking sheet with parchment paper.

Mix dry ingredients

Combine 2 cups of all-purpose flour, ¼ cup granulated sugar, 1 tablespoon of baking powder and ½ teaspoon salt in a large mixing bowl.

Add butter

Add 6 tablespoons of cold unsalted butter, cut into ¼-inch cubes and cut into the flour mixture until it resembles coarse bread crumbs.

Bring dough together

Whisk 1 cup of heavy cream with 1 teaspoon of vanilla extract. Pour the cream into the bowl with the flour and bring together to make a dough ball. Do not overmix.

Add strawberries

Carefully add the strawberries to the dough and mix.

Shape dough

Transfer the dough ball to a floured countertop and gently press it into a 1-inch circle. Don’t overwork the dough.

Cut into scones

Using a sharp knife, cut the dough into 8 triangles.

Freeze briefly

Place the scone triangles on the prepared baking sheet. Place in the freezer for 15 minutes to ensure the scones don’t spread while baking.

Brush with cream and sprinkle sugar

Brush the tops of the scones with the reserved tablespoon of cream and sprinkle the tops with turbinado sugar.

Bake

Bake the scones in the oven for 18-23 minutes until golden brown on top.

Leave to cool

Remove from the oven and leave to cool completely.

Make glaze

In a small bowl, combine 1½ cups of confectioners’ sugar, 2 tablespoons of milk and ½ a teaspoon of vanilla together until smooth.

Serve

Generously drizzle glaze over the cooled scones and eat immediately.
