250 ml Sour cream
200 g Self-raising flour plus extra for dusting
¼ tsp Baking soda
150 g Coconut desiccated
1-2 tbsp Powdered sugar

I love this Pineapple & Coconut Cake because it is full of tropical flavors that make me feel like I’m on holidays when I eat it! To be honest if you had asked me about cake flavor combinations that I love, coconut and pineapple cake would not have been the first to come to mind. That was before I discovered this amazing recipe! Now it’s right there at the top of my list!

This pineapple and coconut cake recipe is super easy to make too! Start by creaming butter and sugar before beating in eggs and sour cream. Sift in the dry ingredients and finally mix in the coconut and pineapple. Bake in a preheated oven until a skewer comes out clean. Once the cake has cooled completely, dust with powdered sugar and enjoy!

Steps to make Pineapple & Coconut Cake

Heat oven and prepare a baking pan

Preheat your oven to 355 ºF. Lightly grease and flour a 7 inch baking pan.

Prepare pineapple

Prepare 200 grams of fruit by peeling, coring and finely chopping a fresh pineapple.

Cream butter and sugar

In a large mixing bowl, cream 110 grams of butter and 100 grams of caster sugar until smooth.

Add eggs and sour cream

Beat in 2 large eggs followed by 250 millilitres of sour cream.

Sift dry ingredients

Sift a mixture of 200 grams of flour, ¼ teaspoon of bicarbonate of soda and a pinch of sea salt into the wet ingredients. Fold through gently.

Add coconut and pineapple

Mix in 150 grams of coconut and the chopped pineapple.

Transfer the cake mixture to the prepared baking pan. Bake in the oven for about 1 hour and 15 minutes, until golden on top and a skewer inserted in the center comes out clean.

Allow the cake to cool slightly in the tin before removing and leaving to cool completely on a wire rack.

Serve

Dust with powdered sugar before serving.
