Ingredients

1 ½ cups All-purpose flour unbleached
2 tsp Baking powder
½ tsp Baking soda
½ tsp Kosher Salt
1 ½ tsp Cinnamon ground
1 ½ cups Pumpkin puree (NOT pumpkin pie filling)
1 cup Milk unsweetened cashew (or your favorite milk)
2 Eggs
2 tsp Vanilla extract pure
2 tbsp Coconut oil melted
2 tbsp Maple syrup pure
For the cinnamon maple syrup
2 cups Maple syrup pure
2-5 inch Cinnamon stick broken in half

These Pumpkin Waffles With Cinnamon Maple Syrup are my go-to breakfast treat in Winter. My son who has a December birthday always requests these pancakes for his birthday breakfast and I always make them on Christmas Day too! I love any excuse to use my waffle iron and this recipe is as good an excuse as any!

Make the waffle batter by mixing the dry ingredients and wet ingredients together. Pour ¼ cups of the waffle batter into a waffle iron and cook according to the manufacturer’s instructions. I like mine crispy on the outside and fluffy on the inside! Serve with cinnamon infused maple syrup.

Mix dry ingredients together

Mix the flour, baking powder, baking soda, salt and cinnamon together in a large mixing bowl.

Combine wet ingredients together

Whisk together the pumpkin puree, milk, egg, vanilla extract, coconut oil and maple syrup until smooth.

Combine the wet and dry ingredients

Pour the wet ingredients into the dry and mix until the ingredients are just incorporated. Do not over-mix.

Heat a waffle iron

Preheat a waffle iron and coat lightly with cooking spray.

Add batter to the waffle iron

Ladle ¼ cup of the waffle batter onto the waffle iron. Use a rubber spatula to spread it out and cook according to the manufacturer’s directions.

Make the cinnamon maple syrup

While the waffles cook, place the maple syrup and cinnamon sticks in a small saucepan and simmer over medium heat until you are ready to serve.

Serve

Serve the waffles immediately and drizzle with cinnamon maple syrup.
