As the name suggests, the main ingredient in this Quiche Leekraine is the humble leek! I love leeks – they are such a versatile ingredient. Their mild onion-like flavor makes them the perfect ingredient for a quiche with strong salty bacon and a rich cheesy, eggy filling.
Start by sautéing leeks in olive oil and fry some streaky bacon until crispy. Make the quiche filling by whisking eggs and adding cheese, milk, leek and bacon. Pour the filling into a pre-cooked pastry crust and bake in the oven until golden on top. Serve with a fresh green salad and you have a delicious lunch in under an hour.
To make Quiche Leekraine, you will need the following ingredients:
Preheat the oven to 355 °F.
Sauté 300 grams of sliced leek in a skillet with olive oil over medium heat. Stir occasionally until the leeks have softened.
In a separate pan, fry 3 slices of bacon until crispy.
In a medium sized bowl, whisk 3 large eggs. Add 75 grams of Cheddar cheese, 250 ml of milk and stir through the cooked leek and bacon. Season with salt and black pepper to taste.
Place a pre-cooked pastry crust onto a baking sheet and pour in the egg mixture.
Bake in the oven for 25-30 minutes until the egg filling is golden on top and cooked through.
Serve with a fresh, crisp green salad.
