In a blender, pulse the spinach leaves, until a paste forms. Add the spinach to the onion mixture. Cook and stir for about 2-3 minutes, until all the water has evaporated from the spinach.

Combine the uncooked rice, coriander powder and salt into the spinach mixture, until evenly combined.

Cook rice

Transfer the rice mixture to a rice cooker and add water. Cook the spinach rice in the rice cooker for about 20 minutes, or according to the manufacturer’s instructions.
