I am so excited to share this Raspberry Peach Freezer Jam recipe with you today as it is such a great summer jam recipe which keeps for up to a year in the freezer. Freezer jam differs from usual jam recipes because it requires very little cooking time.
My top tips when you start this recipe is to dip the peaches in boiling water for about 45 seconds to make peeling easier. Mash the peaches and the raspberries and mix with pectin in a saucepan. Leave to rest for 30 minutes, stirring regularly. Add corn syrup and sugar and heat until the sugar dissolves. If you’re storing this in the refrigerator, transfer to glass jars. Otherwise place in plastic containers to freeze.
To make Raspberry Peach Freezer Jam, you will need the following ingredients:
Place mashed raspberries and peaches together in a large pot. Add the pectin gradually while stirring constantly.
Leave the mixture for 30 minutes. Stir every 7-10 minutes.
After 30 minutes, add 1 cup of corn syrup and place the pot on the stove over medium heat. Add 4½ cups of sugar gradually and cook for about 5 minutes.
Once the sugar is dissolved, transfer the jam to clean plastic containers or glass jars and place in the freezer or the refrigerator.
This jam tastes delicious on hot buttered toast.
