I love these Rose Meringue Cookies – they taste absolutely delicious and they are the perfect dessert for Valentine’s Day. You will only need 4 ingredients for these cookies too which makes them even better in my book! If you don’t have cream of tartar, use a pinch of salt instead.
Some of my top tips for whipping egg white for meringue are: all your bowls and equipment must be completely clean – wipe with a paper towel with vinegar before starting if you want to be extra sure. There should also be no egg yolk traces in the whites and make sure your kitchen is cool while you are working!
To make Rose Meringue Cookies, you will need the following ingredients:
Heat oven to 200 °F. Line a baking tray with parchment paper.
Whisk egg whites and ¼ teaspoon cream of tartar (or a pinch of salt ) until frothy
Whisk ½ a cup of powdered sugar gradually (1-1½ tablespoons at a time ) to ensure you do not deflate or knock the air bubbles out of the white.
Add ½ a teaspoon of vanilla extract and continue to beat the mixture at high speed until stiff peaks form.
Add 3-4 drops of food coloring (if using), and fold gently to combine until color is evenly distributed.
Drop spoonfuls or pipe meringues onto the baking tray.
Bake the meringues in the preheated oven for 1½ hours.
Once cooked, turn off the oven. Leave the meringues to cool completely in the closed oven for another 1½ hours.
Serve as a sweet light Valentine's Day dessert with espresso.
