This Scrambled Eggs with Smoked Salmon recipe is a perfect brunch to feed a crowd. I love to make this when we have guests over for brunch or staying overnight. It is simple and absolutely delicious. Before you start, reserve 2 slices of salmon for garnish.
Chop remaining salmon into very small pieces. Whisk cream and eggs together. Add half of the chopped chives and season the egg mixture to taste with salt and pepper. Melt butter in a large non-stick skillet. Add eggs and scramble using a wooden spoon. When the eggs have come together but are still wet, stir in the chopped salmon. Remove the pan from the heat. Garnish with the reserved salmon and chives and serve from the warm pan.

Set 2 slices of the smoked salmon to one side.
Whisk together 12 eggs and ½ cup of heavy cream.
Add ½ of the chopped chives and season the egg mixture with salt and pepper.
Preheat a large nonstick skillet over medium heat. Place 2 tablespoons of butter in the pan and melt. Add egg mixture.
Scramble the eggs with a wooden spoon. When eggs have come together but are still wet, stir in the chopped salmon.
Remove the pan from the heat and place on a trivet.
Garnish the scrambled egg with the reserved salmon and the the remaining freshly chopped chives.
Serve straight from the pan.
