1 (16-ounce) package Potato Gnocchi
8 ounces Shrimp medium, peeled and deveined
2 tbsp Olive oil
6 tbsp Unsalted butter divided
Kosher Salt to taste
Black pepper to taste, freshly ground
3 cloves Garlic minced
â…“ cup Chicken stock
1 Lemon juiced, or more, to taste
2 tbsp Parsley fresh leaves, chopped

The Shrimp Scampi Gnocchi is my husband’s favorite dinner and he suggests pairing a good dry white wine with this course. Simple to make but fancy in flavor, no one would even know.

Using store bought gnocchi is probably easier and skips a few steps, however, if you do have a good homemade gnocchi recipe then definitely try and experiment with that. Homemade pasta is always fun to make!

To make Shrimp Scampi Gnocchi, you will need the following ingredients:

Steps to make Shrimp Scampi Gnocchi

Boil gnocchi

In a large pot of salted, boiling water, cook 1 package (16-ounces) of potato gnocchi according to package instructions. Drain well.

Sauté gnocchi

In a large skillet over medium-high heat, heat 2 tablespoons of olive oil and add the boiled gnocchi. Sauté for about 2-3 minutes per side until golden and lightly crisped. Remove from skillet and set aside.

Cook shrimp

In the same skillet, melt 2 tablespoons butter and add 8 ounces of medium shrimp. Season with salt and pepper, to taste and then cook, tossing occasionally, for about 2-3 minutes until cooked through and pink. Then, remove from skillet and set aside.

Add garlic

Add 3 cloves of minced garlic and cook while stirring, for about 1 minute until aromatic.

Add chicken stock and lemon juice

Pour in â…“ cup of chicken stock and lemon juice from 1 lemon. Bring to a boil, then reduce heat and simmer for about 2 minutes until the sauce has reduced to half.

Add butter

Add remaining 4 tablespoons of butter, 1 tablespoon at a time until melted through and sauce is smooth.

Add gnocchi and shrimp

Return sautéed gnocchi to the skillet along with prepared shrimp scampi and gently toss to coat and mix.

Serve

Garnish with a few sprinkles of parsley leaves and serve!
