Simple Vegan Scrambled Eggs
One of the things I missed most went I went vegan was scrambled eggs. That was until I started to make these Simple Vegan Scrambled Eggs from tofu! When scrambled, tofu has a similar texture to scrambled eggs. It packs the same protein punch and you can customize it just as easily. Sometimes I add spinach and mushroom to mine, but mostly I just stick to the plain recipe below.
You can cook this tofu in oil or water, depending on your own dietary requirements. Heat the oil / water in a large pan. Add crumbled tofu and turmeric and season with salt and black pepper. Serve on freshly toasted bread and sprinkle some freshly chopped parsley on top.
