This Skinny Cheesy Potato Casserole is all of the cream and cheese and none of the guilt. Who doesn’t love a skinny potato recipe that doesn’t make you feel heavy or bloated after a meal.
Boil the potatoes to a perfect tender but chunky texture and combine with green onions, melted butter, low fat cream cheese, nonfat Greek yogurt, skim milk, salt and pepper and part skim mozzarella and cheddar cheese oozing through and bubbling over the top.
To make Skinny Cheesy Potato Casserole, you will need the following ingredients:
Grease a 3-quart casserole dish or a 9x13 dish with cooking spray and set aside.
In a large pot of salted water, bring the potatoes to a boil. Cook for 8-10 minutes until tender with a bite. Remove from the water, drain and allow to cool.
Once cool enough to handle, using the largest grate side on a grater, shred the potatoes.
In a large mixing bowl, whisk the melted butter, cream cheese, Greek yogurt, milk, salt and pepper, together, to combine.
Fold in the shredded potatoes, chopped green onions and ½ cup each of mozzarella and cheddar cheese. Combine together.
Pour the potato mix into the casserole dish and top with handfuls of the remaining ½ cup each of mozzarella and cheddar cheese to cover.
Bake the potato casserole in the oven at 375°F for about 30 minutes until the cheese is melted and bubbly.
Remove and serve immediately.
