This Slow Roasted Citrus Salmon is not just for fancy dinner parties but ideal for family dinners too. Most children can be quite picky when it comes to fish and seafood and I believe this recipe breaks all misconceptions.
Salmon fillets cooked in olive oil with lemons, blood oranges, tangerines, sprigs of thyme, parsley leaves and fennel fronds. The taste is flavorsome and scrumptious.
To make Slow Roasted Citrus Salmon, you will need the following ingredients:
Preheat the oven to 300 °F.
Generously season 1½ pound of salmon fillet with salt and pepper and transfer to a baking dish.
Arrange 2 thinly sliced lemons around the fillet along with 1 thinly sliced blood orange and 1 thinly sliced tangerine.
Add 4 thyme sprigs, ¼ cup of fresh parsley leaves and ¼ cup of fennel fronds then drizzle with 1½ cups of olive oil.
Bake in the preheated oven for about 25-35 minutes until the salmon begins to turn opaque in color and the edges are almost cooked through.
To serve, season with a little more salt and pepper, some leftover fresh parsley leaves and a squeeze of lemon juice.
