Recipe Description

This Smoked Sausage and Vegetable Soup recipe is a great option for those evenings when you have a whole lot of leftover vegetables, chopping them up, throwing them together and boiling up a delicious, healthy and nutritious soup. I most prefer smoked turkey kielbasa sausage and my butcher has the best!

I add yellow onion, carrots, celery, yellow bell pepper, garlic, tomatoes, red potatoes, Italian seasoning, zucchini, chopped spinach and finally, shredded Parmesan cheese. Phew, it’s packed with all the best ingredients!

Steps to make

    Cook sausage

    In a large pot over medium-high heat, heat 1 tablespoon of olive oil and then add 12 oz of quartered and sliced turkey sausage. Cook for 2 minutes to brown slightly then toss and cook for another 2 minutes. Transfer to a plate.

    Return the skillet to the heat and add another tablespoon of olive oil. Heat then add 1½ cups of chopped yellow onion, 1 cup of diced carrots and 1 cup of diced celery. Sauté for 3 minutes.

    Add 1½ cups of chopped yellow bell pepper and 1½ tablespoons of minced garlic. Sauté for another 2 minutes.

    And broth, potatoes, tomatoes and seasoning ingredients

    Pour in 6 cups of low-sodium chicken broth, 1 can of petite diced tomatoes, 1½ cups of peeled and diced potatoes, 1 tablespoon of dried Italian seasoning and salt and pepper to taste. Stir to mix.

    Add the cooked sausage and stir through. Bring the soup to a boil then reduce the heat and simmer, covered, for about 15 minutes. Stir a few times during the cooking time.

    Add 1 cup of diced zucchini, stir through and cook for 10 minutes until all the vegetables are softened.
