The recipe is easy to follow. Start with the chicken. Slice the chicken breasts in half lengthwise – so you have four thinner pieces. Pro tip: Freeze the chicken breasts for 15 minutes to firm them up. This will make slicing them much easier. Season the chicken, then pan-sear in a hot skillet until golden. Pull the chicken out of the skillet and toss in the remaining butter and sliced onions. Allow the onions to brown and caramelize, then add the garlic, chicken broth, and Worcestershire sauce. Now, stir in the sour cream and let it heat gently. Add the chicken back to the skillet and let it cook for another minute. Spoon some sauce over the top. Serve the chicken sprinkled with some chopped parsley if you wish.
To make the Sour Cream and Onion Chicken, you will need the following ingredients:
Slice 2 chicken breasts in half lengthwise - so you have 4 thinner pieces. Sprinkle both sides of each piece with ½ a teaspoon garlic powder and salt and black pepper to taste.
To a large skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon butter. Let the skillet heat up for a few minutes.
Add the chicken and sear for about 5-6 minutes per side or until golden and cooked through (165 °F). Transfer the chicken to a warm plate.
Reduce the heat to medium, and add in the remaining 1 tablespoon butter and 1 sliced onion. Sauté the onion, stirring frequently, until softened and lightly browned, about 10-15 minutes.
Stir in 1 minced garlic clove and cook for 30 seconds.
Stir in ½ cup chicken broth and 1 teaspoon Worcestershire sauce, scraping up any browned bits from the bottom of the skillet.
Stir in 1 cup sour cream until the sauce is smooth. Let it heat through for a couple of minutes. Make sure the sauce doesn't bubble too much or else it could curdle.
Add the chicken back to the skillet. Spoon some sauce over the top. Season with extra salt and black pepper if needed.
Serve immediately with the chopped parsley sprinkled over the top if you wish. Enjoy!
