This Sourdough Focaccia with Floral Art recipe is another great way to use up your sourdough discard. If you are anything like me, you abhor the idea of wasting food and that’s why sourdough discard recipes are vital at the moment!

Start by mixing the ingredients for the dough together. Leave the dough to proof. Proofing the dough will take around 6 – 8 hours depending on the temperature of your room and the strength of your starter. Once the dough has doubled in size, place it in a baking pan. Leave to rise again before dimpling the surface and decorating with garlic, herbs and vegetables. Bake and enjoy!

Steps to make Sourdough Focaccia with Floral Art

Mix discard, water and salt

Place 100 grams of sourdough discard in a large bowl with 10 grams of salt and 440 grams of water. Stir to combine.

Add flour

Add 512 grams of flour and mix until the flour is fully combined.

Fold dough

Fold the dough over until you have completed 10 folds. Drizzle the dough with oil and rub to coat.

Proof dough

Place a tea towel over the bowl and set to one side until the dough has doubled in size.

Transfer dough to baking pan

Pour 2 tablespoons of olive oil into the center of a baking pan which measures approx 12 by 10 inches. Place the dough carefully into the center and fold it like an envelope from top to bottom and side to side to create a rectangular shape.

Leave to rise

Turn the dough over so that the seam is face down. Brush the top of the focaccia dough with olive oil and leave to rise for another 4 to 6 hours until it doubles.

Heat oven

Preheat the oven to 425 °F.

Dimple dough

Press into the dough with your fingers until the surface is dimpled.

Decorate

Decorate the top of the dough with the halved garlic bulbs and any combination of herbs and vegetables to create a floral image on top of the loaf. Drizzle with some olive oil and sprinkle with sea salt.

Bake

Bake in the preheated oven for about 25 minutes until golden on top and the bread makes a hollow sound when you knock on it.

Serve

Leave the cooked bread to cool in the pan for 30 minutes before slicing and serving.
