1 cup Quinoa dry (or 2.5–3 cups cooked)
14 oz (can) Black beans low sodium, rinsed & drained
2 Bell pepper diced
1 cup Corn cooked or thawed
1 bunch Cilantro finely chopped
¼ cup Red onion finely chopped
1 Jalapeño pepper seeded and minced
1 clove Garlic grated
Juice of 2 large Lime
¼ cup Olive oil extra virgin
1 tsp Cumin
1 tsp Chili powder
½–¾ tsp Salt
Black pepper ground, to taste

Cook quinoa

Cook quinoa as per package instructions or cook quinoa with a ratio of 1 cup dry quinoa to 1.5 cups water. Bring to a boil and cook on low for 12 minutes. Once cooked, set aside for 5 minutes and fluff.

Combine salad ingredients

In a large salad bowl, mix the black beans, bell peppers, corn, cilantro, red onion, jalapeno, garlic, lime juice, olive oil, cumin, chili powder, salt and ground black pepper.

Add quinoa and toss to combine together.

Serve immediately or chill for about an hour and then serve.
