This Spiced carrot & lentil soup is delicious and really wholesome. I love spiced soups and I always try to add cumin and chilli flakes to my veggie soups for a warm hearty bowl of goodness. The depth of flavor these spices bring to a humble soup always surprises me!
It’s super simple to make too. Start by toasting the cumin seeds and chilli flakes. Reserve half of the toasted spices before adding olive oil and the remaining ingredients to the pan. Simmer until the lentils are soft, then blend and serve topped with plain yogurt and reserved toasted spices.
To make the Spiced carrot & lentil soup, you will need the following ingredients:
Place 2 teaspoons of cumin seeds and a pinch of chilli flakes in a large saucepan over medium heat. Toast for 1 minute until the spices release their aromas.
Reserve half of the spices and add 2 tablespoons of olive oil to the pan.
Add 600g of coarsely grated carrots, 140g of split red lentils, 1l of hot vegetable stock and 125ml milk to the pan. Bring the contents of the pan to the boil.
Simmer the soup for 15 minutes until the lentils are soft.
Blend the soup in a food processor or with a handheld blender until smooth.
Serve the soup in large bowls with a dollop of plain yogurt and sprinkled with the reserved spices. Add hot naan bread on the side.
