This Spicy Peach and Avocado Salad is one of my favorite summer salads. I love the combination of creamy avocado and juicy sweet peaches. The addition of fresno chili adds a warm kick to this salad.
Start by whisking a dressing made from lemon juice, oil, honey, shallot, and chili in a large bowl. Add peaches and toss to coat. Leave the peaches rest for between 15-60 minutes.
Just before serving, add avocado and mint and toss to combine. Garnish with pistachios and mint.
To make my Spicy Peach and Avocado Salad, you will need the following ingredients:
In a large bowl, whisk 3 tablespoons each of fresh lemon juice and olive oil with 2 teaspoons of pure honey, 1 finely chopped shallot, and 1 thinly sliced fresno chili. Season to taste with salt and pepper.
Add 3 peaches chopped into wedges and toss to coat with the dressing. Let the peaches rest for a minimum of 15 minutes and up to 1 hour.
Add 2 chopped avocados and ½ a cup of chopped fresh mint. Toss to combine and season again with salt and pepper.
Serve the salad in the large bowl and garnish with ¼ cup of chopped pistachios and a few chopped mint leaves.
