This Vegetarian Spinach, Pea and Garlic Scape Soup is a great Spring recipe. Soup is one of my go-to recipes. What’s not to love? Most soups are healthy, filling and very easy to make and great to feed a crowd for lunch! I always have a bowl of soup on standby at the weekend as my kids do lots of sports activities and they are ALWAYS hungry!
This healthy soup has a lovely vibrant green color from a medley of green veggies. I usually throw in any greens I have like chives, spinach, peas and garlic scapes. Garlic scapes are the green stalks that grow from the bulbs of garlic plants. They’re very common in Spring and they have a lovely subtle garlic flavor.
To make the Spinach, Pea and Garlic Scape Soup, you will need the following ingredients:
Heat the oil and melt the butter in a large pot over medium-high heat. Sauté the onion for a few minutes, until soft.
Add the garlic scapes and the chives. Season to taste with salt and cook for a few minutes, until everything is soft.
Stir in the spinach and peas. Cook for a few minutes until the spinach wilts.
Add the stock and bring to a simmer for 20-25 minutes until the vegetables are soft and tender.
Add a splash of cream and check the seasoning. Add more salt if necessary.
Blend until smooth with a hand-held blender. Alternatively, you could transfer the soup in batches to a regular blender.
Serve the soup in a large bowl with fresh bread on the side.
