Spinach and Potato Frittata

This Spinach and Potato Frittata is one of the most versatile recipes in my repertoire! I frequently make a version of this frittata for a quick, delicious and nutritious midweek meal. I sometimes add extra ingredients if I have them like chopped red peppers, crispy fried bacon (omit if you’re cooking for vegetarians!) or crumbled feta cheese.

Start by sautéing sliced potatoes in olive oil. Add spinach, garlic and green onions and sauté briefly before pouring in a milk and egg mixture. Sprinkle shredded Cheddar cheese on top and continue to cook until the eggs are firm. I like to serve my frittatas with fresh sourdough or ciabatta bread.

To make Spinach and Potato Frittata, you will need the following ingredients:

Steps to make Spinach and Potato Frittata

1

Heat oil

1

Pour 2 tablespoons of olive oil into a medium sized skillet and place over medium heat.

2

Sauté potatoes

Place 6 sliced potatoes in the pan and cover. Sauté the potatoes for about 10 minutes, until they are tender but still firm.

3

Add veggies

1

Add 1 cup of spinach, 2 tablespoons of green onions and 1 teaspoon of garlic. Season to taste with salt and pepper and cook for a further 1 to 2 minutes, until the spinach is wilted.

Combine milk and eggs

1

Beat 6 eggs and ½ a cup of milk together in a separate bowl.

5

Add egg mixture to pan

1

Pour the egg and milk mixture into the pan with the spinach and potatoes. Sprinkle with ½ a cup of Cheddar cheese.

It was good the first day but the second day (the leftovers) were slightly soggy so will have to eat them the same day from now on.

Would recommend for potato lovers but this will be only a side dish for me and my family, we liked the Jack potato leek soup more than this potato dish.
