This Strawberry Fudge makes a perfect Valentine’s Day treat – I make some of this fudge every year. It’s such a great recipe because you can make it in advance and store it for up to three weeks in the refrigerator or three months in the freezer. You can make this fudge using white confectionery coating chips (no cocoa butter) or pure white chocolate which contains cocoa butter. If you use the confectionary chips, you will need 24 oz, but you will need to use more pure white chocolate (28oz) to have the same effect.
Start by melting white chocolate chips either in the microwave or on the stove. Add strawberry sauce, lemon juice and salt. Pour the mixture into a foil lined pan and chill for 2 hours until firm. Couldn’t be easier!
To make Strawberry Fudge, you will need the following ingredients:
Place 24 oz white chocolate chips or 28 oz pure white chocolate in a bowl and melt either in the microwave or on the stove.
Add 11.75 oz strawberry sauce, 1 tsp of lemon juice, and pinch of salt to the melted white chocolate. Stir well until fully combined.
Pour the strawberry fudge mixture into a non-stick 8 inch square baking pan lined with foil.
Cover and place in the refrigerator to chill for at least 2 hours until firm.
Once solid, remove the fudge from the pan and peel off the tin foil.
Cut the fudge into 36 equal squares.
Serve immediately or store by wrapping the fudge in wax paper and placing it in a zip lock bag or airtight container and placing in the refrigerator or freezer.
