1 cup Strawberries sliced
1 cup Baby spinach
½ tsp Olive oil extra-virgin
½ tsp fresh Lemon juice
to taste Salt

¼ cup Parmesan cheese shaved fresh
3 tbsp Pistachio nuts dry-roasted, shelled and chopped

Strawberry, Pistachio, and Goat Cheese Pizza are words that I never really thought I’d be using in the same recipe, but here we are! I first tried this unusual flavor combination at one of my book club meetups. It was someone else’s turn to host and she served a few of these pizzas. I have to say I was unsure, until I tasted a slice & it tasted amazing! Really fresh and light.

The goat cheese pairs really well with the strawberries. The pistachio gives a nice nutty texture and a slightly salty taste. If I am making this for ourselves, I use a prebaked pizza crust that I buy at the store as it’s so easy. If I am making these pizzas for a crowd, I’ll make up a batch of pizza dough.

Steps to make Strawberry, Pistachio and Goat Cheese Pizza

Heat the oven

Preheat the oven to 425 °F.

Bake the pizza crust

Place the pizza crust on a baking tray and bake for 8 minutes in the preheated oven.

Top the crust with goat cheese

When the crust is out of the oven, place the goat cheese on top.

Make the dressing

Mix the olive oil, lemon juice, salt, and black pepper together in a bowl.

Make the strawberry topping

Add the strawberries and baby spinach, gently toss to coat well.

Top the goat cheese with the strawberries

Spoon the strawberry topping onto the goat cheese and spread out evenly.

Garnish with pistachios and parmigiano-reggiano

Top the pizza with the pistachio nuts and cheese shavings.

Serve

Cut into slices and serve.
