4 tbsp Olive oil extra-virgin
275-300 ml Water warm

30 g Parmesan cheese grated
Large handful Parsley fresh flat leaf parsley, finely chopped
Handful Chives fresh, finely chopped
1 Eggs lightly beaten

This Tear & Share Feta Herb Bread is a delicious cheese bread, studded with chunks of feta cheese and fresh herbs. This bread is a really versatile recipe which is a great addition to your Thanksgiving or Christmas table. It is equally good to serve at a picnic or outdoor meal in summer too.

Start by making a bread dough. Make a cheese filling by mixing feta, Parmesan and herbs in a bowl with some oil. Spread the filling over the dough and roll it into a log. Slice into 7 equal pieces and arrange them in a circle with one in the center, surrounded by six of the slices. Once the dough rises, bake in the oven. Perfect for sharing!

Prepare baking sheet

Line a baking sheet with parchment paper.

Make dough

Place 500 grams of flour in a large mixing bowl. Add 1 sachet of dried yeast, 2 teaspoons of salt and 1 teaspoon of sugar. Mix together and create a well in the center. Gradually add 3 tablespoons of oil and enough of the warm water to bring together as a soft dough.

Knead

Transfer the dough to a lightly floured surface. Knead for 8-10 minutes until smooth.

Prove the dough

Transfer the dough to an oiled bowl. Cover with a clean towel and leave in a warm draft-free place until doubled in size.

Make cheese filling

Combine 100 grams of feta with 30 grams of Parmesan, the remaining olive oil and the chopped herbs in a bowl. Cover and place in the refrigerator to chill.

Knead the dough gently once or twice.

Roll out the dough

Roll the dough out on a lightly floured surface to make a 10x14-inch rectangle.

Add filling and roll

Top the dough evenly with the cheese and herb mixture. Roll the rectangle of dough up starting from one long side to make a log shape.

Assemble the bread

Cut the dough log into 7 thick slices. Arrange 6 of the slices, in a circle, cut-side up on the prepared baking sheet. Place the slices roughly 1 inch apart. Place the last slice in the center of the circle.

Leave to rise

Cover the bread and leave to rise for 30-40 minutes.

Heat oven

Preheat the oven to 355 °F. Brush the bread dough with beaten egg.

Bake

Bake the bread in the oven for 40-50 minutes until golden on top and cooked through.

Leave to cool

Remove the bread from the oven and leave to cool for 5 minutes on the baking sheet. Once cool enough to touch, wrap in a clean towel.

Hello, thanks for the recipe but when I cut the dough roll and put it in the tin the upper side was quite flat and never really opened up like yours. First I even thought that you had maybe cut individual strips and then rolled each separately? The result of mine was not this beautiful, because yours look almost like a flower. I will add a photo! Thanks...
