With fresh Romaine lettuce and shredded rotisserie chicken toss in red and green bell pepper, black beans, corn, tomatoes, onion, avocados, cilantro and crushed tortilla chips giving you this cool and crunch, spicy texture. Coat your salad in our homemade taco, ranch sauce and mayonnaise salad dressing. Everything about this recipe is mouthwatering!
To make Tex-Mex Chopped Chicken Salad, you will need the following ingredients:
In a large bowl, mix the shredded chicken, romaine lettuce, red and green bell peppers, black beans, corn, tomatoes, onions, avocado and cilantro. Toss to combine.
In a small mixing bowl, whisk the mayonnaise, Greek yogurt, ranch seasoning and taco seasoning until smooth.
Toss the salad with dressing, using as much as you like.
Top with crushed tortilla chips and serve.
